Is it too early to start making pumpkin desserts? Yes? Well, I'm sorry then if you don't like it, you can leave this page. 🙂 Just kidding. In about a month, it will be full blown pumpkin season! This Summer has gone by so fast, and for the last three days, we've had the most excruciating heat weave here. Temps were in the upper 90's, and my air conditioner was on non stop for the last couple of days. Today, it actually feels like Fall outside which is super nice! I'd rather the temps be in the mid 70's.
This weekend, I also ran the Color Vibe Run. It takes me about 50 to 55 minutes to run a 5k. They had 5 different stations set up throughout the course and each one had a different color. People volunteered to throw the colors at you and when you were done, you're body was completely covered in chalk/dust. It was pretty fun. They could have picked a better location for the run. It was at the Fair Grounds, and I was running on grass a lot. Here's me with my messy running hair after.
Well, I was trying to figure out ways to make this dessert a bit Weight Watcher friendly, but I have yet to find a good pumpkin cookie recipe for Weight Watchers. After running a 5 k, I've pretty much burned all the calories for these cookies! If anybody has a good low fat pumpkin cookie recipe please send it my way! Since it is still Summer out, and people go nuts over S'mores desserts, I thought I'd stuff a marshmallow and piece of chocolate inside some pumpkin cookies and call it a day. Got to use my brother's kitchen blow torch that he got me for my birthday finally. It works wonders for toasting marshmallows.
The cookies split in the middle while pressing them onto the marshmallow. Isn't that what normally happens when you bite into a s'more anyway? Use whatever pumpkin cookie recipe you like for the cookies.

Pumpkin S'more Cookies
Ingredients
- 1 recipe for pumpkin cookies (any kind)
- 1 package of Hershey Candy Bars
- Jumbo Marshmallows
Instructions
- Roast marshmallows on a stick over campfire. Place between two pumpkin cookies and a piece of chocolate. Enjoy!
