Ramen Noodles with Shrimp and Broccoli

If you're looking for a way to upgrade that Ramen noodle packet try  this recipe for Ramen Noodles with Shrimp and Broccoli. A packet of Ramen is 10 points on Weight Watchers and some ways I like to bulk that up are by adding zero point veggies and protein to the noodles.

Zero Point Asian Ingredients for Weight Watchers

There are quite a few Asian ingredients that are zero points like Soy Sauce, ground ginger, garlic, sriracha, etc. Regular brown sugar is more points but I have found the perfect brown sugar substitute and it's called Sukrin Gold. I purchase my bag on Amazon here.

Ramen Noodles with Shrimp and Broccoli

For one of my New Year's resolutions,  I want to cut back on kitchen waste. One way I'm going to do that is to scale down the recipe size for 2 people. This recipe is meant for 1 person but I think the portion size is enough for 2 with the  amount of Ramen noodles that comes in a package. I'm also trying to eat more veggies and broccoli is one of my favorites. I like to keep frozen bags of broccoli in my freezer a long with shrimp. I'll take out a handful of the shrimp and broccoli to use just for the dish.

Ramen Noodles with Shrimp and Broccoli

Ingredients for Ramen Noodles

1 3 oz packet instant noodles
2 tablespoon soy sauce
2 tablespoon water
1 tablespoon Surkin Gold Brown Sugar Substitute
¼ teaspoon fresh ground ginger
¼ teaspoon fresh garlic
1 pinch of Crushed Red Pepper
3 oz of frozen broccoli
3 oz of Shrimp 

How to make Ramen Noodles with Shrimp and Broccoli

Cook the noodles according to package directions. Drain. Add frozen broccoli and shrimp to a non stick skillet and saute for 3 to 5 minutes until the shrimp are no longer pink. Add the sauce and noodles and stir until everything is coated in the sauce. It couldn't be any easier. Sometimes I will use the same skillet to cook the noodles, shrimp, and broccoli with.

If you're looking for a way to upgrade that Ramen noodle packet try this     recipe for Ramen Noodles with Shrimp and Broccoli.


Scale

Ingredients

  • 1 3 oz packet instant noodles
    2 tablespoon soy sauce
    2 tablespoon water
    1 tablespoon Surkin Gold Brown Sugar Substitute
    ¼ teaspoon fresh ground ginger
    ¼ teaspoon fresh garlic
    1 pinch of Crushed Red Pepper
    3 oz of frozen broccoli
    3 oz of Shrimp 

Instructions

  1. Mix soy sauce, water, brown sugar substitute, garlic, and ginger in a bowl.
    Cook ramen noodles in boiling water according to package directions. Do not use spice seasoning packet. Drain.
  2. In a skillet add broccoli and shrimp and cook until through. The shrimp will turn a pink color when they are done. Pour in sauce and add noodles. Garnish with a pinch of crushed red pepper if you like the heat.

Do not add spice packet that came with the package.
