Red, White, and Blue Rosemary and Parmesan Potatoes

Ingredients

  • 2 1/2 cups of red, white, and blue potatoes or baby red potatoes
  • 1 sprig of Rosemary chopped
  • 2 tsp of chopped garlic
  • 1 tablespoon of Olive Oil
  • 2 tablespoons of Parmesan cheese
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Slice the potatoes in half and place them on a sheet tray. Add one tablespoon of olive oil, the rosemary, and garlic to the potatoes. Using your fingers, spread the potatoes around on the baking sheet until the potatoes are all coated with oil.
  3. Bake the potatoes at 400 degrees for 30 minutes. Once the potatoes are don’t sprinkle with parmesan cheese.
