Hey everyone, if you like to meal prep like I do, then you're going to love Gorton's Seafood products. I took their Shrimp Scampi (which is one of my favorite dinners) and made it into a healthy meal that you or your family can enjoy for dinner. Gorton's Seafood is very Weight Watcher friendly. Their Classic Grilled Salmon is 2 smart points, Shrimp Scampi 3 smart points, Grilled Haddock 1 smart point, and Grilled Tilapia is 1 smart point. This whole entire meal is only 10 smart points. It also contains a starch, protein, and vegetables so everything can be easily portioned out for the week.
My original plan was to make some seafood lasagna roll-ups but this shrimp scampi is baked in the oven for 27 minutes. No one is going to want to make lasagna after waiting for the shrimp to get done. 🙂 On to plan #2. When I saw that this shrimp scampi was baked in the oven a classic sheet pan dinner came to mind. Cut up your favorite veggies (I used zucchini and sweet potatoes). One of my favorite veggie combo ever is zucchini, onions, and carrots. There are so many ideas. Place the cut up vegetables on to one side of the sheet pan and the shrimp scampi foil packs on another side. Super easy to do and while the shrimp and veggies are baking you can prepare the orzo. After all the meal prepping is finally done you've got 4 easy healthy dinner recipes for 4 days this week. I hope you enjoy this!
Note: there is enough sauce in packets to pour over the veggies and orzo so you don't really need any oils or anything to cook the veggies with.




Shrimp Scampi Sheet Pan Dinner - Meal Prep
Ingredients
- 1 package of Gorton's Classic Shrimp Scampi
- 2 cups of orzo
- 2 zucchini
- 2 sweet potatoes
Instructions
- Preheat oven to 375.
- On a sheet pan, place the 2 packets of shrimp scampi packets and cut up vegetables. Bake in oven at 375 for 25 to 28 minutes.
- While the shrimp and vegetables are cooking boil some water and cook the orzo until al dente.
