Simple Cucumber Salad

Simple Cucumber Salad uses just 3 simple veggies and the marinade is also 3 ingredients. This salad is quick and easy to make on a hot day when you don’t feel like cooking!

With Summer quickly approaching this simple cucumber salad is the perfect light and refreshing salad. There is no mayo or sour cream used in this salad. It is just simple ingredients like cucumber, tomatoes, and onions and the marinade is vinegar and oil. My 2 favorite Summertime veggies next to grilled corn.

Two of my favorite past times is sitting outside in the Summertime and just listening to the birds sing or doing some star gazing. I’m not that great at listening to bird calls and being able to tell you exactly what bird that is but I’m getting better at it. Is there an app for that? I’d like to know. It is almost kindo of relaxing listening to birds and if I focus on them long enough it’s almost a form of meditation to me. Very relaxing. This post was updated on 4/25/2019 but I decided to keep the bird photos that I took a couple of Memorial Day weekends ago.

Ingredients for Simple Cucumber Salad:

  • English cucumbers
  • Onion
  • Tomatoes - I used Roma
  • White wine vinegar
  • Olive Oil - this cucumber salad comes to 2 smart points per serving on WW mainly because of the olive oil. If you leave the oil out or use less oil it will be zero.
  • Oregano - Don’t like oregano? Use Dill or any other herb you like.
  • Salt

How to make Simple Cucumber Salad

  1. Make the dressing: add the olive oil, vinegar, oregano, and salt to a small bowl and whisk to combine. Set a side.
  2. Slice the cucumbers and onion. Dice tomatoes, removing excess juice. Place in a bowl.
  3. Add the dressing and toss to coat. Salt/pepper to taste if needed.
  4. Best if refrigerated for at least an hour to let the flavors combine.

Tips for Simple Cucumber Salad

Using a mandoline will help get you even slices of cucumber and onion.

The recipe calls for 2 tablespoons of oil to make the dressing. If you want to lower the points for the dressing just use less. Of course you can always leave out the dressing and sprinkle on some oregano to the onions, cucumbers, and tomatoes to make it zero points.

Ingredients

  • 2 large English cucumbers
  • ½ onion
  • 2-3 tomatoes
  • {For the dressing}
  • 3 Tbsp. white wine vinegar
  • 2 Tbsp. olive oil
  • 1 tsp. oregano
  • ⅛ tsp. salt

Instructions

  1. Make the dressing: add the olive oil, vinegar, oregano, and salt to a small bowl and whisk to combine. Set a side.
  2. Slice the cucumbers and onion. Dice tomatoes, removing excess juice. Place in a bowl.
  3. Add the dressing and toss to coat. Salt/pepper to taste if needed.
  4. Best if refrigerated for at least an hour to let the flavors combine.
  5. Makes 4 servings, serving size ¾ cup.
