Description

This copy cat recipe for Barbacoa Beef is pretty damn close to Chipotle's recipe. The sauce is a mixture of chipotle peppers in adobo sauce, garlic, spices, onion, and water. 


Ingredients

Scale
  • 3 lbs beef eye of round or bottom round roast, all fat trimmed
  • 5 cloves garlic
  • 1/2 medium onion
  • 1/2 lime, juice
  • 2-4 chiptoles in adobo sauce (to taste)
  • 1 tbsp ground cumin
  • 1 tbsp ground oregano
  • 1/2 tsp ground cloves
  • salt and pepper
  • 3 bay leaves
  • 1 tsp oil
  • 1 cup water

Instructions

  1. Combine garlic, onion, lime juice, chipotle peppers, garlic, cumin, oregano, water, oil,  and cloves in a food processor. Pulse all the ingredients together until smooth. 
  2. Place the beef roast in the slow cooker and pour the sauce on top of the roast. Add the bay leaves on top. 
  3. Cover and cook on low for 6 to 8 hours or until the beef is fork tender. You should be able to shred the beef with a fork. 
  4. Instant Pot: 
  5. Saute the beef with some oil on both sides using the Saute function that comes with the Instant Pot. 
  6. Make the sauce in the food processor and pour it over the beef.
  7. Set the Instant Pot to Manual and cook for 1 hr. Let the pressure slowly release.
