Description
This copy cat recipe for Barbacoa Beef is pretty damn close to Chipotle's recipe. The sauce is a mixture of chipotle peppers in adobo sauce, garlic, spices, onion, and water.
Ingredients

- 3 lbs beef eye of round or bottom round roast, all fat trimmed
- 5 cloves garlic
- 1/2 medium onion
- 1/2 lime, juice
- 2-4 chiptoles in adobo sauce (to taste)
- 1 tbsp ground cumin
- 1 tbsp ground oregano
- 1/2 tsp ground cloves
- salt and pepper
- 3 bay leaves
- 1 tsp oil
- 1 cup water
Instructions
- Combine garlic, onion, lime juice, chipotle peppers, garlic, cumin, oregano, water, oil, and cloves in a food processor. Pulse all the ingredients together until smooth.
- Place the beef roast in the slow cooker and pour the sauce on top of the roast. Add the bay leaves on top.
- Cover and cook on low for 6 to 8 hours or until the beef is fork tender. You should be able to shred the beef with a fork.
- Instant Pot:
- Saute the beef with some oil on both sides using the Saute function that comes with the Instant Pot.
- Make the sauce in the food processor and pour it over the beef.
- Set the Instant Pot to Manual and cook for 1 hr. Let the pressure slowly release.
