Take your classic brownie recipe and turn it up a notch by adding some crushed graham crackers, marshmallows, and chocolate to make them S’more brownies! The perfect end of Summer campfire treat!
Anything that says S'mores on it these days I'm pretty much hooked and have to try it. I went to a pizza place and they had a S'mores dessert pizza there but by the time I got done eating I was pretty full. Should have had dessert first I guess. I did not follow this recipe exactly because I didn't have any cocoa powder. Used a box mix of brownies and just drizzled some melted chocolate on the top of them. Yep, they tasted like a S'more.

How to Make S'more Brownies
- Preheat the oven to 350 degrees. Spray an 8X8 in a pan with nonstick cooking spray.
- Add graham crackers to a food processer and pulse them until they are fine crumbs. If you don't have a food processer, stick the graham cracker sheets in a ziplock bag and crush them with a wooden rolling pin or meat mallet.
- Combine the crumbs, 2 Tbs sugar, and ¼ cup melted butter in a small bowl. Press firmly in the bottom of the 8×8 dish.
- In a medium bowl or KitchenAid mixer, combine softened butter, 1 cup sugar, and cocoa until smooth. Add eggs and stir. Add flour, vanilla, and salt until the mixture is combined. Spread half over the graham cracker crust.
- Sprinkle marshmallows on top of half of the layer, then spread the remaining batter on the top. Bake at 350 for 25 minutes.
- Sprinkle the chocolate chips or broken Hershey bars on top of the brownie. Return to the oven and let cook for 3 more minutes. Remove from oven and spread chocolate with a rubber spatula. Cool completely.
Tips for S'more Brownies
How to tell when a brownie is done?
Testing brownies is kind of the same way you test any baked bread to see if it's done. You take a toothpick and insert it into the brownie. Small crumbs should stick to the toothpick.
If you want toasty marshmallows on top just like at the campfire, stick the brownies under the broiler for a bit to let them get all toasty on top. You can also use one a kitchen blow torch to toast the marshmallows. A heat gun will also work.
