There's nothing better than a good S'mores in the summer when you're at the lake cabin sitting by the campfire. Oh, but there is! A S'mores cookie! Just when you thought a S'mores couldn't get any better. It's a cookie, with mini chocolate chips inside and little pieces of Hershey's chocolate and mini marshmallows all in one bite. Not to mention there is also a ton of butter and graham cracker crumbs in the batter too. Mmmmm.....mmmmm.......mmmm............. What a heavenly cookie.
We haven't made many S'mores at the lake cabin this summer. When I make a S'more, I like it when the marshmallow looks like it's chard on the outside and nice and gooey on the inside. Now I'm thinking of a what a freshly made marshmallow would taste like all chard on the outside. Note to self: bring freshly made marshmallows to the lake cabin next time. 🙂
Ingredients for Smore Cookies
All purpose flour
Graham cracker crumbs
Baking soda
Salt
Butter, softened
Sugar
Brown Sugar
Vanilla extract
Eggs
Miniature chocolate chips
Mini marshmallows
Hershey Bars, chopped
How to make Smore Cookies
In a medium bowl combine the flour, graham cracker crumbs, baking soda, salt. Whisk together. In a separate larger bowl beat together the butter, sugar, brown sugar and vanilla until creamy. Add the eggs one at a time, beating well after each addition. Slowly beat in the flour mixture until smooth. Stir in the chocolate chips. Drop by rounded tablespoon onto ungreased cookie sheet.
Bake for 8 minutes, and remove from the oven. Push 3 to 4 marshmallows and a few pieces of hershey bar into each cookies. Return to the oven and bake an additional 3-4 minutes until fully cooked. Cool cookies on a wire rack.
