Spicy noodles made with an infused chili oil that is topped with fresh cilantro, peanuts, and carrots! You probably have most of the ingredients already!

Since there is a pandemic going around (Covid 19) I’ve decided to share some good recipes that require the use of a lot of dry storage or pantry items.  This recipe contains all items that can be easily stored in a pantry such as chili sauce, vegetable oil, sesame oil, honey, and soy sauce.

Spicy Thai Noodles

This recipe involves infusing oils together with dry spices and a strainer is needed to discard the crushed red pepper flakes. A mesh colander works great for straining spices.

Spice Level

How spicy do you like your food on a scale of 1 to 10? I’d rate these noodles at a 7. What makes them spicy? The oil is infused with crushed red pepper flakes and the crushed red pepper flakes get strained out of the oil. Adding hot sauces to this will make it even spicier.

Add fresh garnish to this dish like cilantro, peanuts, and toasted sesame seeds. If you want to make this a meal add some protein to it like cooked chicken, shrimp, or tofu if you’re vegetarian.

Grocery List

Here is the basic rundown of what is needed for this dish. I’ve also included substitutes that can be used if you do not have any of these items.

Noodles - Any longer noodles will work for this like linguine, rice noodles, or ramen noodles.

Crushed Red Pepper - this gives the dish its heat! The recipe below calls for 1 to 2 tablespoons of it, useless if you don’t want so much heat.

Vegetable oil - use  canola or olive oil as a substitute

Sesame oil - Once a bottle of sesame oil is opened it must be stored in the fridge or else it will go bad pretty quickly if left in the pantry.

Honey - sub: agave nectar

Soy sauce - sub: coconut aminos, low sodium soy sauce is always best

Chili sauce - sub: Sriracha

Geen onions, Carrots, Cilantro, and Peanuts are for garnishes!

How to make Spicy Thai Noodles

Cook the noodles: Boil noodles according to package directions. Drain and set aside.

Make the infused oil: Cook oils together over medium heat with the crushed red pepper flakes. When the oil is hot enough, strain red pepper flakes. Reserve oil in a bowl.

Make the Sauce: Add the strained oil back into the skillet with honey, soy sauce, and chili sauce. Toss the pasta together with the sauce.

Whisk together the honey and soy sauce into the oil.

Assemble and Garnish! Pour mixture on top of noodles and toss together until noodles are well coated. Chop the veggies and peanuts and add them to the noodles.

Makes 8 servings: Serving size: 1 cup

What other ingredients can be added?

Make this dish a whole meal and add in some protein like shrimp, chicken, or tofu. Add in extra veggies like snow peas or shredded cabbage.
