Tator Tot, Sausage and Egg Pie

This Tator Tot, Sausage, and Egg Pie is where it's at and your family is going to love it on Christmas morning.  It will keep them full for quite some time up until around whenever you serve the big meal. We actually ate this for dinner last night, and it was almost gone except for this leftover piece that I had to photograph. I was dreaming about this sausage and tator tot pie all day long at work, and I'm still thinking about it now. The one piece that is still left has cheese on it, so it's all mine. Mine I tell ya! It's a good recipe to use up all those leftover tator tots that are in your freezer. Now, I just have to figure out what to do with the sweet potato fries in the freezer.

What Ingredients do I need? 

In this section, you can find substitutes or suggestions for certain ingredients. I also will try and list out what the ingredients' purpose is for. 

Sausage  -  Use Sweet, Mild, Hot, or Italian sausage. I like hot in this casserole. 

Frozen Tator Tots - Any shape or size will work. Can even use the shredded. 

Eggs  - Large eggs 

Low Fat Cheddar - I use low-fat cheddar to make this casserole WW friendly but if you aren’t following WW use whatever you like. 

 How to make Tator Tot Sausage Casserole

Preheat the oven to 400 degrees.

Brown the sausage in a skillet over medium heat. Use a meat masher to break up the sausage while it's cooking.  Transfer to a bowl to let it cool.

In another bowl add the frozen tater tots, eggs, cheese, salt and pepper, and seasoning.

Add the sausage and stir until everything is well combined.

Pour the casserole mixture into an 8X8 pie pan or casserole dish 9X9. Cook for 30 minutes covered with tin foil. The last ten minutes, take the casserole out, top with cheese, and bake until the cheese has melted.

Ingredients

  • 16 ounces of frozen tator tots
  • 1 pound of sausage/lean turkey sausage
  • 8 large eggs
  • 1 cup of low fat cheddar cheese
  • salt and pepper to taste
  • 1 tsp of Lawry's Seasoning Salt

    ll if using regular sausage and 8 if you use lean turkey sausage. 🙂
