    Tropical Fruit Pizza

    This tropical fruit pizza is a lightened-up version of the classic fruit pizza and uses the recipe for 2 ingredients dough for the crust. It's just equal parts self-rising flour and Greek Yogurt.

    Do you ever look at your old photos on Facebook that come up in your news feed for memories? The other morning, I saw some pictures on there from Hawaii. My family took a trip to Kauai and we were there at about this time last year. That took me back to the tropics.  Seeing that pic also made me want to make something tropical-ish and that is how this fruit pizza came about.

    Variations for Fruit Pizza

    I've done this ever so popular 2 ingredient dough recipe with fruit pizza before and used  mixed berries and  some lemon extract in the cream cheese mixture. It was really good and since then, I've been thinking of so many different variations on fruit pizza. Normally fruit pizzas are made with a cookie crust and with this dough recipe you don't really miss that.

    How to make Tropical Fruit Pizza

    See my recipe on how to make 2 Ingredient Dough first (see recipe) . Cook the dough without any toppings on it and set the dough out to cool.

    In a food processor or blender combine 4 oz of less fat cream cheese with 2 tablespoons of powdered sugar and some 1 teaspoon of rum extract. Coconut extract would be really good with this too. Blend it up until smooth and once the dough has cooled spread the cream cheese mixture on it.

    Next, cup up your fruit. I used one whole pineapple, 2 mangos, and 4 kiwis . Then I added some lime zest, and the juice of one lime to the fruit. There will be leftover fruit to eat and it will not fit on top of the whole pizza. That is ok though, there's just more for later to use on top of a waffle the next morning for breakfast. 🙂

    How to store leftovers: Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container before putting it in the freezer or fridge. 

    This can be prepped the day ahead.

    How to cut a pineapple?

    Use a really sharp knife to cut pineapples. I like to use serrated knives. First slice the top off the pineapple. Next, slice the bottom end off so your pineapple can sit up nicely on the cutting board. Make thin slice cuts down the sides of the pineapple until all the sides are off. There is a core in the middle of the pineapple, so when you are cutting the pineapple make sure cut outside the core and then cut all the slices off into chunks. There are really helpful videos out there on how to cut a pineapple. They even have fancy pineapple cutters you can buy at the stores these days.

    How do you figure out points for recipes? 

    Nutrition info is calculated with the zero point food included in the recipe. If you’re using the nutrition info to figure out points it might not be the same as what the points are listed in the notes section. I use the recipe builder to calculate points. Myfitness pal for nutrition info.

    • 1 recipe for 2 Ingredient Dough 
    • 4 oz of light cream cheese or fat free cream cheese
    • 2 tablespoons of powdered sugar
    • 1 tsp of rum or coconut extract
    • Toppings:
    • 1 pineapple, cut into small chunks
    • 2 mangos cut into small chunks
    • 4 kiwis, diced
    • 1 lime whole, juice and zested

    Instructions

    1. See my recipe on how to make 2 Ingredient Dough first. Cook the dough without any toppings on it and set the dough out to cool after it is done baking in the oven.
    2. In a food processor or blender combine 4 oz of less fat cream cheese with 2 tablespoons of powdered sugar and 1 teaspoon of rum extract. Coconut extract would be really good with this too. Blend it up until smooth and once the dough has cooled spread the cream cheese mixture on it.
    3. Next, cup up your fruit.  I cut my fruit into really small pieces. There will be leftover fruit to eat and it will not fit on top of the whole pizza. That is ok though, there's just more for later to use on top of a waffle the next morning for breakfast. 🙂 Add all the fruit to the bowl. Zest one lime and try not to get the white skin and the juice of one lime on top of all the fruit and stir until well combined. Using a large spoon, add the fruit to the top of the pizza. Enjoy with a margarita.
