Tropical Fruit Pizza

Ingredients

  • 1 recipe for 2 Ingredient Dough 
  • 4 oz of light cream cheese or fat free cream cheese
  • 2 tablespoons of powdered sugar
  • 1 tsp of rum or coconut extract
  • Toppings:
  • 1 pineapple, cut into small chunks
  • 2 mangos cut into small chunks
  • 4 kiwis, diced
  • 1 lime whole, juice and zested

Instructions

  1. See my recipe on how to make 2 Ingredient Dough first. Cook the dough without any toppings on it and set the dough out to cool after it is done baking in the oven.
  2. In a food processor or blender combine 4 oz of less fat cream cheese with 2 tablespoons of powdered sugar and 1 tsp of rum extract. Coconut extract would be really good with this too. Blend it up until smooth and once the dough has cooled spread the cream cheese mixture on it.
  3. Next, cup up your fruit.  I cut my fruit into really small pieces. There will be leftover fruit to eat and it will not fit on top of the whole pizza. That is ok though, there's just more for later to use on top of a waffle the next morning for breakfast. 🙂 Add all the fruit to the bowl. Zest one lime and try not to get the white skin and the juice of one lime on top of all the fruit and stir until well combined. Using a large spoon, add the fruit to the top of the pizza. Enjoy with a margarita.
