
These watermelon popsicles are super fun for Summer! They look like watermelon and taste like watermelon. The watermelon seeds in these ice pops are chocolate chips.
Watermelon jello and chocolate chips you say? That doesn't sound so good, but it is good! Here's the thing about layered ice pops. The waiting. The jello layers take about 20 - 30 minutes to get hard in the freezer where you can start adding the second layers. The recipe states 20 minutes no less, but not every freezer is created equal. There are white fridges, stainless steel fridges, nicer fridges than the one I have... Boy, would I ever love to get a new fridge because it is ANCIENT? In order to actually do that though, there would have to be a lot of kitchen remodel because a newer fridge wouldn't even fit in the doors in our kitchen. *sigh
Watermelon is by far my most favorite fruit of Summer. Next would be the honey dew, and cantelope. Summer is also awesome because you can make homemade freezer pops. I've had my freezer mold for 2 years now and just love it. In order to get the ice pops out you just run some cold water under them and they pop right out. If a product says sugar free or low fat and you aren't following a diet, sub out for what you'd like.
Ingredients for Watermelon Popsicles
- Lime-flavored gelatin (sugar free)
- Water
- Watermelon-flavored gelatin (sugar free)
- Miniature semi-sweet chocolate chips
- Yoplait® French vanilla yogurt (low fat)
How to make Watermelon Popsicles
- Add lime gelatin mix in medium bowl. Add 1 cup boiling water; stir 2 min. until completely dissolved. Add enough ice to ½ cup cold water to measure ¾ cup. Add to lime gelatin; stir until ice is completely melted. Refrigerate 30 min.
- Meanwhile, repeat Step 1 using watermelon gelatin mix and omitting the refrigeration step. Pour 2 tablespoon of the watermelon gelatin into each of the 16 (3-oz) paper cups. Freeze 20 min (no more, no less!). Stir ½ teaspoon mini chocolate chips into gelatin in each cup so that they are somewhat evenly spaced.
- Spoon an additional 2 tablespoon yogurt into the cups on top of the red gelatin mixture. Freeze for another 10 minutes. Then gently pour 2 tbsp. of the lime gelatin mixture on top of the yogurt layer in each cup. Insert a stick into each cup, then freeze for 3 hours or until frozen.
