Watermelon Mojito
3 cups ½-inch cubes watermelon
12 medium to large fresh mint sprigs
6 tablespoon fresh lime juice
2 tablespoon granulated sugar
6 oz. light rum
4 lime slices
4 mint sprigs
Place watermelon cubes in a blender. Blend until smooth.
In a small pitcher, combine fresh mint leaves, sugar, and fresh lime juice. Using the handle of a wooden spoon, muddle the ingredients to release the oils from the mint. Take care not to muddle to the point where the leaves fall apart. Pour rum and the watermelon puree into the pitcher and stir gently.
Fill four tall glasses (such as Collins glasses) with ice and divide the mojito amongst the glasses. Garnish with lime slices and mint sprigs, and serve immediately.
Serves 4.

This is what I made, with that huge watermelon I got at the Farmer's market today. There is still a lot left of it too, and it is a really sweet watermelon.
I am invited to a dinner party tomorrow. I told everyone going there that I'd bring mojitos, since there is a lot of mint in my garden still. This is a taste test recipe to see if it was worthy enough of bringing to the dinner. I even got a little cute drink carrier so that my drink can easily be transported to parties. I don't know what to think about this one yet, and am not sure if I should bring it or not. It is good though. There is also a bunch of grapes in my fridge right now, thinking about trying a grape mojito as well????
