Description

Ingredients

1 medium zucchini, sliced into fries (or spears)

1/4 cup Panko breadcrumbs – adds crunch; use whole wheat if you prefer

1/4 cup grated Parmesan cheese – adds salty umami flavor

1 large egg, beaten

1/4 tsp garlic powder

1/4 tsp smoked paprika (optional, for a little kick)

Olive oil spray


Instructions

Preheat air fryer to 400°F.

Slice zucchini into fry shapes (about 1/2-inch thick).

In a shallow bowl, mix the breadcrumbs, Parmesan, garlic powder, and paprika.

Dip each zucchini stick in beaten egg, then coat in the breadcrumb mixture.

Lightly spray the air fryer basket with olive oil. Arrange fries in a single layer (don’t overcrowd).

Air fry for 8–10 minutes, flipping halfway through, until golden and crisp.
