Ingredients
1 large tomato
¼ cup low-fat or regular cottage cheese
1 tsp Dijon mustard
Salt & pepper to taste
Optional add-ins: sliced turkey, sprouts, fresh basil, or red onion
Instructions
Slice your tomato into thick ½-inch rounds. Pat dry with paper towels to reduce slip + sogginess.
In a small bowl, mix cottage cheese + Dijon mustard until creamy.
Spread mixture onto one tomato slice, season with salt + pepper.
Add optional toppings if using, then top with the second tomato slice.
