Blackstone Nachos

Description

Nachos are a good example of what it's like to make a personal preference meal and they are fun to make on a Blackstone Griddle. I used my Ninja Foodi Grill Outdoor smoker to smoke the meat before hand.


Ingredients

Scale

1 bag tortilla chips (about 10 oz)

1 lb boneless skinless chicken breast, diced

1 tablespoon olive oil or avocado oil

⅓ cup BBQ sauce (your favorite brand—sugar-free for WW-friendly)

1 cup shredded cheddar or Mexican blend cheese

½ cup black beans, rinsed and drained

¼ cup corn (canned or frozen)


Instructions

Preheat your Blackstone griddle to medium-high heat and lightly oil the surface.

Cook the chicken: Add diced chicken and cook for 6–8 minutes, stirring occasionally until fully cooked.

Add the BBQ sauce: Lower the heat slightly and stir in the BBQ sauce to coat the chicken. Let it caramelize for a minute or two.

Heat toppings: Move chicken aside and warm the corn and black beans on the griddle.

Assemble nachos: On a clean griddle area, spread out the tortilla chips. Sprinkle with cheese, then layer on the BBQ chicken, black beans, corn, onions, and jalapeños.
