Description

These caramelized sweet potatoes are one of those simple recipes that turn out better than expected. Once you try them this way, it is hard to go back.


Ingredients

2 Sweet potatoes - sliced in half

Olive oil spray – Helps the edges crisp up without using too much oil

2 tablespoons Maple syrup

Salt (optional, after cooking)


Instructions

 Make sure your oven is fully preheated so the sweet potatoes start cooking right away and caramelize properly.

Cut sweet potatoes in half and Try to keep them similar in size so they cook evenly. Line them up in a single layer so they are not overlapping. This helps them roast instead of steam.

Spray lightly with olive oil. This helps the edges crisp up without needing a lot of oil.

Rub with a little maple syrup and arrange cut side down - Place each wedge flat side down on the pan. This step is key to getting those golden brown edges.

Bake for 40 minutes. Remove and check texture. 


Notes

  • Cut side down is what creates that caramelized surface
  • Use just a light coating of maple syrup
  • Leave them alone while baking so they brown properly
