Description

This carnivore meatloaf proves that eating carnivore does not have to be boring. With just a few ingredients, you can create a satisfying, comforting meal that fits perfectly into a zero carb lifestyle.


Ingredients

  • 1 lb Ground beef, preferably 80/20 or higher fat
  • 1 lb of ground pork
  • 1 large Egg
  • 4 oz of softened cream cheese
  • ½ cup of crushed pork rinds
  • ½ cup parmesan cheese
  • Salt to taste


Instructions

Start by preheating your oven to 375 degrees Fahrenheit. Lightly grease a loaf pan or line it with parchment paper.

In a large bowl, add the ground beef, pork, egg, cream cheese, pork rinds, parmesan cheese, salt, and any optional seasonings you are using. Mix gently with your hands until just combined. Overmixing can make the meatloaf dense.

Transfer the mixture into the loaf pan and press it down lightly so it holds together. If you like, you can add a small amount of butter on top for extra moisture.

Bake uncovered for about 45 to 55 minutes, depending on the thickness of your loaf. The internal temperature should reach 160 degrees Fahrenheit.

Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps the juices redistribute and keeps the slices intact.


Notes

Store leftovers in an airtight container in the refrigerator for up to four days. Reheat slices in a skillet over medium heat or in the oven until warmed through.

You can also freeze cooked meatloaf slices for easy future meals.
