Chimichurri Steak Salad

Description

This is one of those meals that feels way more impressive than it actually is. Once you realize you can cook steak in the air fryer and throw together a quick chimichurri in a blender, it becomes an easy go-to.


Ingredients

Scale

1 steak (sirloin, ribeye, or strip)

Salt and pepper

1 cup Fresh parsley 

3 Garlic cloves

2 to 3 tablespoons Red wine vinegar 

¼ cup Olive oil (or see substitution below)

Salt and pepper to taste 

1 can of drained chick peas

1 pint of cherry tomatoes

1 cucumber sliced into quarters

Red Onions (optional)


Instructions

  1. Preheat your air fryer to 400°F
  2. Season steak with salt and pepper
  3. Place steak in the air fryer
  4. 6 minutes per side for medium (this is what I did)
  5. Let the steak rest for 5 minutes before slicing
  6. Add parsley, garlic, vinegar, oil (or butter), and salt to a blender
  7. Blend until combined
  8. Add greens to a bowl
  9. Top with sliced steak
  10. Add tomatoes and any extras
  11. Spoon chimichurri over the top

Notes

  • Serve with sourdough bread on the side
  • Add roasted potatoes or sweet potatoes
  • Turn it into a wrap or steak bowl instead
