Description

If you are looking for a fun, crunchy snack that feels like nachos but is a little lighter, these Courtney Cooks cucumber nachos are such a good option.


Ingredients

  • 1 large or two small cucumbers, sliced into rounds
  • 8 wedges of The Laughing Cow Dill Pickle Flavor Spreadable Cheese Wedges
  • 6 Tbsp. pickle juice
  • 3 Tbsp. finely chopped dill pickles
  • 3 Tbsp. chopped green onion
  • 1 tsp. garlic powder
  • 1 cup salt and vinegar chips, lightly crushed


Instructions

Wash and dry your cucumbers, then slice them into thick rounds. Lay them out in a single layer on a plate or tray.

In a small bowl, mix the Laughing Cow cheese with a small amount of pickle juice. Stir until it becomes smooth and spreadable.

Stir in the chopped pickles so the mixture has both flavor and texture.

Spoon the cheese mixture evenly over each cucumber slice.

Sprinkle crushed potato chips over the top right before serving.

These are best enjoyed right away while the cucumbers are still crisp and fresh.
