Description

Egg white pancakes have taken the internet by storm, thanks to fitness influencer Hailey Fernandes and her viral TikTok recipe. These pancakes are a delightful alternative to traditional pancakes, offering a light and fluffy texture that resembles a souffle. Not only are they simple to make, but they also pack a protein punch, making them a popular choice for health-conscious individuals.


Ingredients

Scale

½ cup of egg whites (approximately 4 large egg whites)

½ banana mashed

1 tsp of baking powder (she eyeballs this if this is all you taste you added too much) 

1 tsp cinnamon

1/2 teaspoon of vanilla extract

Pinch of salt

Cooking spray or butter for greasing the pan


Instructions

Add the egg whites, mashed banana, baking powder, cinnamon, vanilla extract, and a pinch of salt to a blender. Blend until the batter is completely smooth and slightly frothy. Let the batter rest for 3 to 5 minutes to activate the baking powder and thicken.

Preheat and Grease the Pan

Place a nonstick skillet or griddle over medium low heat and lightly coat it with cooking spray or a small amount of butter. Lower heat is important so the pancakes cook through without burning.

Cook the Pancakes

Pour about 1/4 cup of batter onto the warm skillet for each pancake. Use the back of a spoon to gently spread the batter into a small circle if needed. Cook until bubbles form on the surface, the edges look set, and the bottoms are lightly golden, about 2 to 3 minutes.

 

Flip carefully and cook for another 1 to 2 minutes, or until the pancakes are cooked through. These pancakes are delicate, so keeping them smaller makes them easier to turn.

 


Notes

Whip it Up for Fluffiness: To achieve a light and airy texture, consider whipping the egg whites to soft peaks before incorporating them into the batter.

Transfer the pancakes to a plate and keep warm while you cook the remaining batter. Serve with fresh fruit, syrup, yogurt, or your favorite toppings.
