These Mexican Street Corn Sweet Potato Bowls with ground beef are creamy, smoky, and incredibly filling. Made with air fryer sweet potatoes, seasoned beef, and a simple street corn topping, this easy budget-friendly dinner is perfect for busy weeknights.
Ingredients
2 medium sweet potatoes, peeled and cut into ½-inch cubes
1–2 tablespoons olive oil
1 teaspoon chili powder
½ teaspoon garlic powder
Salt and pepper to taste
1 pound ground beef
1 teaspoon chili powder
½ teaspoon cumin
Salt and pepper
Mexican Street Corn Mix
1 can corn, drained well
2 tablespoons mayonnaise
¼ cup feta cheese crumbles
½ teaspoon chili powder
Pinch salt
Splash vinegar or lime juice
Instructions
Toss cubed sweet potatoes with oil and seasonings.
Air fry at 380°F for 18–20 minutes, shaking halfway, until tender and slightly crispy.Brown ground beef in a skillet over medium heat.
Drain excess grease and stir in chili powder, cumin, salt, and pepper.In a bowl, combine drained corn, mayo, feta, chili powder, salt, and vinegar or lime juice.
Mix until creamy.
Layer sweet potatoes in a bowl.
Top with ground beef and street corn mixture.
Add fresh toppings if desired.
Serve warm and enjoy!
