- Prepare the Dipping Station: Set up a breading station with two shallow bowls. In the first bow, beat the eggs with a pinch of salt and pepper. In the second bowl, mix breadcrumbs with Parmesan cheese.
- Coat the Cheese Sticks: Dip each cheese stick into the egg mixture, then roll it in the breadcrumb mixture, pressing gently to adhere. For an extra crispy coating, repeat the egg and breadcrumb steps.
- Freeze the Sticks: Place the coated sticks on a baking sheet lined with parchment paper and freeze for at least 1 hour. This helps the coating adhere and prevents the cheese from melting too quickly during frying.
- Heat the Oil: Pour vegetable oil into a deep fryer or a large pot, filling it to about 3 inches deep. Heat the oil to 350°F (175°C). Use a thermometer to maintain the temperature.
- Fry the Sticks: Carefully lower the frozen mozzarella sticks into the hot oil, a few at a time to avoid overcrowding. Fry for 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.
