If you’re a pickle lover and Aldi fan, you already know about their cult-favorite Pickle de Gallo. It’s like the cool cousin of pico de gallo — but instead of tomatoes, it’s loaded with diced dill pickles, red bell pepper, onions, and a briny punch of pickle juice.

- 1 cup finely chopped dill pickles (cold and crisp – like Aldi’s kosher spears)
- ½ cup red bell pepper, finely diced
- ¼ cup red onion, finely diced
- 1 jalapeño, seeded and minced (optional, for heat)
- ¼ cup fresh cilantro, chopped
- 1–2 tablespoons dill pickle juice
- Juice of ½ lime
- Pinch of garlic powder
- Salt and black pepper, to taste
Instructions
- Finely dice the pickles, red bell pepper, onion, jalapeño, and cilantro.
- Add everything to a mixing bowl.
- Pour in the pickle juice and lime juice. Sprinkle with garlic powder, salt, and pepper.
- Mix well and taste — adjust seasoning as needed.
- Chill for 30 minutes for best flavor (but no judgment if you eat it right away).
Notes
- No red onion? Use green onions or white onion.
- No jalapeño? Add a few dashes of hot sauce or crushed red pepper
