High Protein Taco Queso Dip

Description

For a deliciously spicy and cheesy dip that will be the star of any gathering, this Taco Queso Dip is a must-try.


Ingredients

Scale
  • 1 pound (450g) ground beef
  • 1 packet of Taco seasoning, lower sodium if possible
  • 8 tablespoons of cheddar cheese
  • 2 cups of cottage cheese
  • Salt and pepper to taste
  • Optional garnishes: chopped cilantro, sliced jalapenos, sour cream, diced avocado

Instructions

  1. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef and onion together. Break the beef into small pieces as it cooks. Once the beef is browned and the onion is soft, drain any excess fat. Stir in the taco seasoning mix, add a splash of water if needed, and simmer for a few minutes until the mixture is well combined and slightly thickened. Season with salt and pepper to taste.
  2. In a pyrex dish combine the taco meat, ½ cup of cottage cheese, 2 tablespoons of a cheddar, and place it in in the microwave. Microwave on high for 1 to 2 minutes.
  3. Combine and Serve: Once the cheese is melted and smooth, stir in the cooked ground beef mixture and cheddar cheese. Continue to cook, stirring frequently, until the dip is heated through. If the dip is too thick,

Notes

Serve with tortilla chips and your favorite taco toppings!
