Description

Simple almond flour pancakes made with only 6 ingredients. 2 net carbs per pancake!

Ingredients

Scale

2 large eggs

⅓ cup unsweeted almond milk

1 teaspoon vanilla extract

1 ¼ cup fine almond flour (I used Bob's Red Mill)

¼ teaspoon baking soda

Pinch of salt

Butter for greasing the pan

Instructions

Add all 6 ingredients in a blender and blend until the batter is smooth. Let the pancake batter rest for 5 minutes. Preheat griddle or nonstick skillet. Drop the pancake batter using 1/4 cup on to the griddle. When one side is bubbly and golden brown on the bottom flip the pancakes over and continue cooking until the other side is done. Serve pancakes with melted butter, berries, and sugar-free maple syrup.

Notes

These are not WW pancakes. They are low carb or keto pancakes. 2 net carbs per pancake.
