- 4 walleye fillets (about 6 ounces each)
- 2 tablespoons olive oil
- 2 tablespoons butter or dairy-free butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 1 lemon, sliced
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 400 degrees F. Lightly grease a 9x13-inch baking dish or line it with parchment paper.
- Pat the walleye fillets dry with paper towels and place them in a single layer in the prepared baking dish.
- Brush both sides of the fillets with olive oil, then brush the tops with the melted butter or dairy-free butter.
- In a small bowl, combine the garlic powder, paprika, Italian seasoning, salt, and black pepper. Sprinkle the seasoning evenly over the fillets.
- Place the lemon slices on top of the fish.
- Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145 degrees F.
- Garnish with fresh parsley and serve immediately with additional lemon wedges if desired.
Notes
- Thicker fillets may need an extra 2 to 3 minutes of cooking time.
- Fresh or thawed frozen walleye both work well in this recipe.
- Dairy-free butter can be substituted for regular butter with excellent results.
