- 2 cloves garlic, minced

For the Curry Sauce
- 1 tablespoon coconut oil
- 1–2 tablespoons curry paste, depending on how spicy you like it
- 1 cup chicken broth
- ½ cup heavy cream
- 1 tablespoon soy sauce

Instructions
- Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart as it browns.
- Add the aromatics: Once the beef is browned, add the garlic and ginger. Cook for about 1 minute until fragrant.
- Season the beef: Stir in the soy sauce and sesame oil. Cook for another minute, then remove the beef from the skillet and set aside.
- Start the curry sauce: Reduce the heat to medium and add the coconut oil to the same skillet.
- Add the curry paste: Stir the curry paste into the coconut oil and cook for about 30–60 seconds. This helps bloom the curry paste and brings out its flavor.
- Add the broth: Slowly pour in the chicken broth, scraping up all the browned bits from the bottom of the skillet.
- Make it creamy: Stir in the heavy cream and soy sauce. Bring the sauce to a gentle simmer and cook for a few minutes until slightly thickened.
- Add the beef back: Return the cooked beef to the skillet and stir everything together. Let it simmer for another 2–3 minutes so the beef absorbs the curry sauce.
- Serve: Spoon the creamy beef curry over rice and garnish with fresh chives.
