- 4 cod, haddock, or pollock fillets (about 5–6 ounces each)
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup cold beer (more if needed)
- Extra flour for dredging
- Vegetable or canola oil for frying
Greek Yogurt Tartar Sauce
- ½ cup plain Greek yogurt
- 2 tablespoons chopped dill pickles or sweet relish
- 1 teaspoon lemon juice
- ½ teaspoon dried dill
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Salt and pepper, to taste

- 4 brioche buns
- 4 slices American cheese
- Leaf lettuce
- Dill pickle slices (optional)
Instructions
In a small bowl, stir together the Greek yogurt, pickles, lemon juice, dill, garlic powder, onion powder, salt, and pepper. Refrigerate while you prepare the fish.
Heat 2–3 inches of oil in a heavy pot or Dutch oven to 350°F.
In a large bowl, whisk together the flour, baking powder, paprika, garlic powder, salt, and pepper.
Slowly pour in the cold beer, whisking until the batter reaches a smooth consistency similar to pancake batter.
Pat the fish dry with paper towels.
Lightly coat each fillet in flour, then dip into the beer batter, allowing the excess to drip off.
Carefully place the fish into the hot oil and fry for 4–6 minutes per side, or until deep golden brown and the fish flakes easily with a fork.
Transfer to a wire rack or paper towel-lined plate.
Place the brioche buns in an air fryer at 350°F for 2–3 minutes, until lightly toasted.
Spread Greek yogurt tartar sauce on the bottom bun.
Top with lettuce, the crispy fish, a slice of American cheese, and pickle slices if using.
Finish with the top bun and serve immediately.
Notes
Keep the beer cold for the crispiest batter.
Don't overcrowd the pot—fry the fish in batches if needed.
Use a thermometer to maintain the oil temperature at 350°F.
Toasting the brioche buns adds flavor and helps prevent them from becoming soggy.
For the crispiest leftovers, reheat the fish in the air fryer instead of the microwave.
