Ingredients

- 3/4 cup granulated sugar
- 5 tablespoons unsweetened cocoa powder
- 4 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease an 8-inch round cake pan.
- Add the drained and rinsed black beans, sugar, cocoa powder, eggs, baking soda, and vanilla to a blender or food processor.
- Blend until completely smooth, scraping down the sides as needed.
- Pour the batter into the prepared cake pan.
- Bake for 25–30 minutes, or until the center is set and a toothpick inserted in the center comes out mostly clean.
- Allow the cake to cool before slicing and serving.
Notes
For the smoothest cake, blend the batter thoroughly until no pieces of black beans remain. Be careful not to overbake, as the cake is best when it stays moist and fudgy.
