Description

Hearty and spicy Black Bean soup that tastes just like Panera Bread. 0 WW Freestyle Points| 152 calories. Makes 4 to 6 servings. 


Ingredients

Scale
  • 1 medium onion, finely chopped
  • 2 garlic cloves
  • 1 jalapeño, chopped 
  • 2 small chicken bouillon cubes
  • 1 1/2  cups of water
  • 2 15 oz can of black beans, drained
  • 1 tablespoon cornstarch
  • 1/2 tsp salt 
  • 1/2 tsp cumin 
  • Lemon Juice 

Instructions

  1. In a pot, combine the first 5 ingredients; simmer for 10 minutes.
  2. Add half a can of beans, salt and cumin; cook for 5 minutes.
  3. Combine the cornstarch with 2 tablespoons of water and add it to the beans in the pot. Let it simmer for 2 to 3 minutes more. 
  4. Puree soup (I use an immersion blender which makes it easy to do it right in the pot).
  5. Add the rest of the beans to the soup.
