Description
Hearty and spicy Black Bean soup that tastes just like Panera Bread. 0 WW Freestyle Points| 152 calories. Makes 4 to 6 servings.
Ingredients

- 1 medium onion, finely chopped
- 2 garlic cloves
- 1 jalapeño, chopped
- 2 small chicken bouillon cubes
- 1 1/2 cups of water
- 2 15 oz can of black beans, drained
- 1 tablespoon cornstarch
- 1/2 tsp salt
- 1/2 tsp cumin
- Lemon Juice
Instructions
- In a pot, combine the first 5 ingredients; simmer for 10 minutes.
- Add half a can of beans, salt and cumin; cook for 5 minutes.
- Combine the cornstarch with 2 tablespoons of water and add it to the beans in the pot. Let it simmer for 2 to 3 minutes more.
- Puree soup (I use an immersion blender which makes it easy to do it right in the pot).
- Add the rest of the beans to the soup.
