Description

This Blueberry Grilled Cheese takes a classic comfort food to the next level with a homemade blueberry compote and melty Gruyère or Gouda cheese. Sweet, buttery, and perfectly savory, this easy sandwich is crispy on the outside, gooey on the inside, and ready in just 20 minutes. It's a unique lunch or brunch recipe that's surprisingly delicious and sure to impress.

Blueberry Compote

  • 1 cup fresh blueberries

  • 1 tablespoon granulated sugar (or honey)

  • 1 teaspoon lemon juice

  • 1 teaspoon cornstarch

  • 1 tablespoon water

Grilled Cheese

  • 4 slices sourdough bread

  • 4 ounces Gruyère or Gouda cheese, sliced or shredded (about 1 cup shredded)

  • 2 tablespoons softened butter


Instructions

  1. In a small saucepan, combine the blueberries, sugar, and lemon juice over medium heat.

  2. Cook for 5 to 7 minutes, stirring occasionally, until the blueberries begin to burst.

  3. Mix the cornstarch and water together, then stir it into the blueberries. Cook for another 1 to 2 minutes until the mixture thickens to a jam-like consistency. Let cool for 5 to 10 minutes.

  4. Butter one side of each slice of bread.

  5. Place two slices of bread, butter-side down, in a skillet over medium-low heat.

  6. Divide half of the cheese between the slices. Spread about 2 tablespoons of blueberry compote over each sandwich, then top with the remaining cheese.

  7. Place the remaining bread on top, butter-side up.

  8. Cook for 3 to 4 minutes per side, until the bread is golden brown and the cheese is melted.

  9. Let the sandwiches rest for 1 minute before slicing and serving.


Notes

You'll likely have a little extra blueberry compote, which is great on toast, yogurt, pancakes, waffles, or oatmeal.

Gruyère gives the sandwich a nutty, savory flavor, while Gouda creates a creamier, slightly sweeter bite. Both pair beautifully with the blueberry compote.
