- 2 cups all-purpose flour
- ¾ cups white sugar
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- ½ cup canola oil
- 2 cups fresh cranberries
- 1 cup mandarin oranges, drained
- 2 large eggs
- ¾ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon orange zest
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Grease a large loaf pan
- Combine flour, baking powder, salt, and baking soda in a large bowl in a large bowl.
- In another bowl combine the sugar, eggs, oil, milk, vanilla extract , and orange zest until smooth. Gradually stir egg mixture into flour mixture until batter is thoroughly incorporated. The fold in the mandarin oranges and cranberries into the batter.
- Pour batter into prepared loaf pan.
- Bake in preheated oven for 5 minutes; reduce heat to 350 degrees F (175 degrees C) and continue baking until center of bread springs back when touched, 35 to 40 minutes.
