Description

Grilled pineapple is a delicious tropical fruit that has been cooked on a grill to give it a caramelized exterior and an enhanced sweet and tangy taste. It makes for a great addition to any BBQ or summer menu and can be enjoyed on its own as a healthy snack or used as a topping on burgers, salads, or desserts.


Ingredients

  • 1 fresh pineapple - peeled, cored and cut into 1/4in rings
  • 1/3 cup honey
  • 1 tablespoon melted butter

Instructions

  1. Cut the outer edge of the pineapple off and then slice it in 1/4 in rings. I like to take the core of the pineapple out after I've cut the pineapple into rings.
  2. Place pineapple in a large resealable plastic bag. Add honey and butter. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
  3. Preheat an outdoor grill for high heat, and lightly oil grate.
  4. Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.
  5. Top with ice cream or cool whip!
  6. Serving size: 1 grilled pineapple ring + 1/2 cup of whipped topping.

Juices and sugars from the pineapple marinade can easily stick to a grill when the food is cooking. They burn and turn black easily.
