Air Fryer Honey Walnut Shrimp

Ingredients

  • 1 pound medium shrimp, peeled and deveined
  • Kosher salt and freshly cracked pepper
  • 4 egg whites, whisked
  • 2/3 cup corn starch
  • 1/4 cup reduced-fat mayonnaise
  • 1 tablespoon condensed milk
  • 1 tablespoon honey
  •  1/2 cup walnuts
  • 2 tablespoons sugar
  • Scallions for Garnish

 


Instructions

  1. Mix egg whites and salt together in a bowl. Whisk until frothy and add in cornstarch. The mixture will thick and pasty. 
  2. Season shrimp with salt and pepper and dip in the cornstarch mixture. 
  3. Lay a sheet of parchment in your air fryer basket (this is not necessary but helps with spills). Place the shrimp in your air fryer basket. 
  4. Set your air fryer to 330 degrees for 12 minutes shrimp.
  5. While the shrimp is cooking, make the sauce. Combine mayonnaise, condensed milk, and honey in a small bowl. 
  6. Bring water to a boil in a small saucepan. Add sugar; cook until dissolved, about 1 minute. Add walnuts. Turn heat down to medium-low. Cook, stirring occasionally until syrup thickens and turns into a dark caramel color, 4 to 7 minutes.
