Description
Lo mein is a popular Chinese dish that has gained international acclaim for its delicious blend of flavors and textures and it can easily be made on a griddle or Blackstones. The term "lo mein" translates to "tossed noodles," which refers to the cooking method used to prepare this dish.
Ingredients
- 8 ounces lo mein egg noodles*
- 1 tablespoon olive oil
- 2 tablespoons reduced sodium soy sauce, or more, to taste
- 2 teaspoons brown sugar
- 1 teaspoon sesame oil
- ½ teaspoon ground ginger
- ½ teaspoon Sriracha, or more, to taste
- 2 cloves garlic, minced
- 1 red bell pepper, julienned’
- 1 medium onion, sliced
- 1 carrot, julienned
- 1 pound of chicken breasts, cut into chunks
Instructions
In a small bowl, whisk together olive oil, soy sauce, brown sugar, sesame oil, ground ginger, Sriracha, and garlic; set aside.
In a large pot of boiling water, cook noodles according to package instructions; drain well.
Heat olive oil over medium high heat on an outdoor griddle.
Add garlic, onions, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes.
Stir in egg noodles and soy sauce mixture, and gently tossq to combine.
Serve immediately.
Notes
This recipe is very versatile and you can mix in whatever vegetables you like like snow peas, spinach, or broccoli. Even mushrooms.
