Mixed Lemon Berry Muffins

Do you have the Winter blues? These mixed berry muffins will make you think of hot Summer days when fresh berries are in season. 🙂

Ingredients

  • 3 tablespoons of butter
  • 2/3 cup of sugar
  • 1 egg
  • 1 tsp of vanilla
  • 2 tablespoons of lemon juice
  • 2 tsp of lemon zest
  • 1 cup of frozen mixed berries
  • 1/2 cup of unsweetened almond milk
  • 1 1/2 cups of self-rising flour

Instructions

  1. Preheat oven to 350 degrees F.
  2. Beat the butter and sugar together in a bowl with an electric hand mixer. Add in egg, vanilla, lemon juice, and lemon zest and continue beating until well combined.
  3. Add in 1/2 cup of flour to the batter and 1/4 cup of milk. Beat until everything is incorporated then add in another 1/2 cup of flour. Add in the rest of the flour and 1/4 cup of milk. Once the batter is completely mixed, add in the mixed berries. Fold them into the batter with a spatula. Do not over mix.
  4. Stir in Flour until well combined and fold in the berries
  5. 15 to 20 minutes
  6. Makes 12 muffins
