Description

Do you have the Winter blues? These mixed berry muffins will make you think of hot Summer days when fresh berries are in season. 🙂


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mixed berries 

Instructions

    1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    2. In a separate bowl, combine the milk, vegetable oil, egg, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
    3. Gently fold in your chosen mix-ins, such as chocolate chips or blueberries.
    4. Preheat your air fryer to 320°F (160°C).
    5. Line the air fryer basket with muffin liners or silicone muffin cups. Spoon the batter into each cup, filling them about 2/3 full.
    6. Place the muffin-filled basket into the air fryer and cook for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    7. Remove the muffins from the air fryer and let them cool before serving. Enjoy your delicious air fryer muffins!
