- 1 pound salmon fillet
- 8 ounces penne or bowtie pasta
- 1 package (5.2 ounces) Boursin Garlic & Fine Herbs cheese (or dairy-free Boursin)
- 4 ounces cream cheese (or dairy-free cream cheese)
- 2 cups cherry tomatoes
- 3 cups baby spinach
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1/2 cup reserved pasta water
- Freshly grated Parmesan, optional (or dairy-free Parmesan)
Instructions
- Preheat the oven to 400°F.
- Cook the pasta until al dente. Reserve 1/2 cup pasta water before draining.
- In a 8 x 8 -inch baking dish, add the tomatoes, Boursin, cream cheese, olive oil, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper.
- Place the salmon on top and season with a little extra salt, pepper, and paprika.
- Bake for 20 to 25 minutes, or until the salmon flakes easily with a fork.
- Break the salmon into bite-sized pieces and stir together with the roasted tomatoes and cheeses.
- Stir in the spinach until wilted.
- Add the cooked pasta and enough reserved pasta water to make the sauce creamy.
- Sprinkle with Parmesan if desired and serve.
