Description

Creamy, comforting, and packed with fresh flavor, this Boursin Salmon Pasta is the perfect weeknight dinner. Tender oven baked salmon is paired with juicy cherry tomatoes, fresh spinach, and a rich garlic herb cheese sauce that comes together with Boursin and cream cheese


Ingredients

  • 1 pound salmon fillet
  • 8 ounces penne or bowtie pasta
  • 1 package (5.2 ounces) Boursin Garlic & Fine Herbs cheese (or dairy-free Boursin)
  • 4 ounces cream cheese (or dairy-free cream cheese)
  • 2 cups cherry tomatoes
  • 3 cups baby spinach
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 1/2 cup reserved pasta water
  • Freshly grated Parmesan, optional (or dairy-free Parmesan)


Instructions

  1. Preheat the oven to 400°F.
  2. Cook the pasta until al dente. Reserve 1/2 cup pasta water before draining.
  3. In a 8 x 8 -inch baking dish, add the tomatoes, Boursin, cream cheese, olive oil, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper.
  4. Place the salmon on top and season with a little extra salt, pepper, and paprika.
  5. Bake for 20 to 25 minutes, or until the salmon flakes easily with a fork.
  6. Break the salmon into bite-sized pieces and stir together with the roasted tomatoes and cheeses.
  7. Stir in the spinach until wilted.
  8. Add the cooked pasta and enough reserved pasta water to make the sauce creamy.
  9. Sprinkle with Parmesan if desired and serve.
