Rice Paper Mochi

Ingredients

4 rice paper wrappers

1 cup vanilla Greek yogurt

1/2 cup diced strawberries

1 tablespoon honey (optional)

Powdered sugar or cornstarch for dusting (optional)


Instructions

  1. Dip one rice paper wrapper in warm water for a few seconds until softened.

  2. Place the softened rice paper on a clean cutting board or plate.

  3. Spoon 2–3 tablespoons of yogurt into the center of the rice paper.

  4. Top with diced strawberries.

  5. Fold the rice paper over the filling to create a triangle or pouch shape, gently sealing the edges.

  6. Repeat with the remaining ingredients.

  7. Place the wrapped yogurt bites onto a parchment-lined plate or tray and freeze for 1–2 hours until firm.

  8. Enjoy straight from the freezer for the best chewy texture.


Notes

  • Greek yogurt works best because it is thicker and less messy.
  • Try adding blueberries, mango, banana slices, or chocolate chips.
  • The rice paper becomes soft and chewy once frozen, giving it a mochi-inspired texture.
  • Dust lightly with powdered sugar or cornstarch if sticking becomes an issue
