Slow Cooker Garlic Mashed Potatoes

Ingredients

  • 2.5 lbs of russet potatoes (peeled and diced into chunks)
  • 1/2 cup of low sodium chicken stock
  • 4 cloves of garlic
  • salt and pepper to taste
  • dried chives for garnish (optional)

Instructions

  1. Place all ingredients in a slow cooker and cook on low for 6 to 7 hours. Mash with a potato masher or blend with a hand mixer until smooth and creamy. (I prefer a potato masher)
