1/2 cup chia seeds

1.5 cups plain Greek Yogurt

1/4 cup espresso or strong coffee, cooled

1 teaspoon vanilla extract

1/2 teaspoon cocoa powder (plus extra for dusting) or Cinnamon 


Instructions

  1. Mix the Ingredients: In a large bowl, combine chia seeds, yogurt, espresso or coffee, and cocoa powder. Stir well to ensure the chia seeds are evenly distributed.
  2. Let It Set: Cover the bowl and refrigerate for at least 2 hours, or overnight, allowing the chia seeds to absorb the liquid and thicken into a pudding-like consistency.
  3. Add Creaminess: If you desire an extra layer of creaminess, gently fold in the Greek yogurt or mascarpone before serving.
  4. Serve and Enjoy: Divide the pudding into individual serving dishes, dust with cocoa powder, and garnish with a few coffee beans or a sprinkle of chocolate shavings for an authentic tiramisu touch.
