Description

This easy chicken pot pie is packed with tender rotisserie chicken, creamy broccoli cheddar soup, melted cheese, and fluffy golden biscuits. It's a cozy comfort food dinner made with convenient ingredients, so you can get a homemade-style meal on the table without making a traditional pie crust.

Ingredients

3 cups rotisserie chicken

2 containers Trader Joe's Broccoli Cheddar Soup

1 can refrigerated biscuits

1 cup shredded cheese

Instructions

  1. Preheat the oven. Preheat your oven to 375°F and lightly grease a 9-by-13-inch baking dish.
  2. Prepare the chicken filling. In a large bowl, combine the 3 cups of shredded rotisserie chicken with both containers of Trader Joe's Broccoli Cheddar Soup. Stir until the chicken is evenly coated.
  3. Add the cheese. Stir in about half of the shredded cheese, reserving the remainder for the topping.
  4. Fill the baking dish. Spread the chicken mixture evenly into the prepared baking dish.
  5. Add the biscuits. Arrange the refrigerated biscuits over the top of the filling in a single layer.
  6. Bake the casserole. Bake for approximately 30–35 minutes, or until the filling is bubbling and the biscuits are golden brown and cooked through. Check the biscuit centers carefully, as baking time can vary depending on their size.

Notes

Use rotisserie chicken. This shortcut saves time and adds delicious flavor without having to cook chicken separately.

Check the biscuits. The tops can brown before the bottoms are fully cooked. If necessary, loosely cover the casserole with foil and continue baking until the biscuits are done.
