Ingredients

1 loaf Trader Joe's Sun-Dried Tomato Focaccia

1 (8-ounce) ball of burrata cheese

½ cup mayonnaise

2–3 tablespoons basil pesto

8–10 slices deli turkey

1 large tomato, sliced

Mixed greens, arugula, or spring mix

Thinly sliced red onion

Salt and black pepper, to taste

Optional Additions

  • Provolone cheese
  • Fresh mozzarella
  • Avocado slices

Instructions

  1. Preheat the oven to 350°F.
  2. Slice the focaccia in half horizontally.
  3. Toast the bread in the oven for 5–7 minutes until lightly crisp on the outside while remaining soft inside.
  4. In a small bowl, stir together the mayonnaise and basil pesto.
  5. Spread the pesto mayo generously over both halves of the focaccia.
  6. Layer the turkey evenly over the bottom half.
  7. Add the tomato slices, red onion, and lettuce.
  8. Season with salt and freshly ground black pepper.
  9. Place the top half of the focaccia over the sandwich.
  10. Slice into squares or large sandwich portions and serve immediately.

Notes

Toasting the bread makes a huge difference. It adds crunch while keeping the inside soft and chewy.

Use ripe tomatoes for the best flavor.
