Description

Indulge in the irresistible flavors of fall with this Weight Watchers-friendly Crustless Pumpkin Pie! This delightful dessert offers a lighter twist on a classic favorite, perfect for those who want to enjoy all the pumpkin spice goodness without the extra calories or gluten. 


Ingredients

1 can (15 oz) pumpkin puree

3/4 cup granulated sugar

1/2 cup packed brown sugar

¾ cup evaporated milk

3 large eggs

2 tsp Pumpkin Pie Spice

1/2 teaspoon salt

1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish with non-stick cooking spray or butter.
  2. In a large mixing bowl, combine the pumpkin puree, granulated sugar, and brown sugar. Stir until the sugars are fully integrated into the pumpkin.
  3. Pour in the evaporated milk, and vanilla extract. Crack in the eggs and whisk everything together until smooth.
  4. Add the Pumpkin Pie Spice to the pumpkin mixture. Stir until all the spices are evenly distributed.
  5. Transfer the pumpkin mixture into the prepared pie dish, smoothing out the top with a spatula.
  6. Bake the pie: Place the pie in the preheated oven and bake for 50 to 60 minutes, or until the center is set and a knife inserted in the middle comes out clean.

Notes

  1. Cool and serve: Allow the pie to cool on a wire rack to room temperature. For best results, chill in the refrigerator for at least an hour before serving.
