Creating air fryer tomato soup is a unique approach that adds a rich, roasted flavor to this classic dish. Here's a simple recipe to guide you through the process:
Ingredients
1 pint cherry or grape tomatoes
1 tablespoon olive oil
Salt and pepper to taste
Fresh basil leaves for garnish (optional)
1 - 2 cups of Low sodium chicken stock
Equipment needed: air fryer, blender
Instructions
- Preheat your air fryer to 400°F (200°C) for about 3 minutes. This helps ensure the tomatoes cook evenly.
- Place the seasoned tomatoes in a single layer in the air fryer basket. Be careful not to overcrowd them, as this will prevent proper roasting. Season with salt and pepper and drizzle with olive oil.
- Cook the tomatoes in the air fryer for 10-12 minutes, shaking the basket halfway through the cooking time to ensure even roasting. The tomatoes should be slightly shriveled and caramelized on the edges when done.
- Carefully remove the tomatoes from the air fryer and transfer them to a serving dish. Garnish with fresh basil leaves if desired.
- When the air fryer tomatoes are done add the warm tomatoes to a blender with some chicken stock and blend until smooth.
- Serve with some Air Fryer Grilled Cheese.
Notes
Always store leftovers in clean, food-grade airtight containers. The type of container doesn’t really matter. Use zip lock, glass, plastic, whatever!
