Description

Creating air fryer tomato soup is a unique approach that adds a rich, roasted flavor to this classic dish. Here's a simple recipe to guide you through the process:


Ingredients

Scale

1 pint cherry or grape tomatoes

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

1 - 2 cups of Low sodium chicken stock

Equipment needed: air fryer, blender 


Instructions

  1. Preheat your air fryer to 400°F (200°C) for about 3 minutes. This helps ensure the tomatoes cook evenly.
  2. Place the seasoned tomatoes in a single layer in the air fryer basket. Be careful not to overcrowd them, as this will prevent proper roasting. Season with salt and pepper and drizzle with olive oil.
  3. Cook the tomatoes in the air fryer for 10-12 minutes, shaking the basket halfway through the cooking time to ensure even roasting. The tomatoes should be slightly shriveled and caramelized on the edges when done.
  4. Carefully remove the tomatoes from the air fryer and transfer them to a serving dish. Garnish with fresh basil leaves if desired.
  5. When the air fryer tomatoes are done add the warm tomatoes to a blender with some chicken stock and blend until smooth.
  6. Serve with some Air Fryer Grilled Cheese. 

Notes

Always store leftovers in clean, food-grade airtight containers. The type of container doesn’t really matter. Use zip lock, glass, plastic, whatever!
