Description

My baked oats recipe is pretty popular on this site so it was only a matter of time before I made baked pumpkin oats. Especially since it’s the Fall season.

Ingredients

Scale
  • 1/4 cup pumpkin puree
  • 1/4 cup blended oats
  • 1 tablespoon sugar-free maple syrup
  • 1/2 tsp vanilla
  • 1/2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • Pinch of salt
  • 5 - 7 Sugar-free chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Mix together all the ingredients in a bowl. Pour the batter into a greased muffin tin or 8 oz round ramekin.
  3. Blender: For a smoother batter puree the oatmeal mixture in a blender until smooth. Pour the batter into a muffin tin or 8 oz round ramekin. Then top with chocolate chips (optional).
  4. Bake for 20 to 25 minutes. Best served warmed.
  5. Air Fryer: Set the air fryer to bake and temperature to 325. Bake for 7 to 10 minutes.
