    Baked Pumpkin Oats - for One

    My baked oats recipe is pretty popular on this site so it was only a matter of time before I made baked pumpkin oats. Especially since it’s the Fall season. This is just like the regular version except all I did was add in some pumpkin puree and pumpkin pie spice. I plan on making some apple pie baked oats soon. These are very WW-friendly for breakfast as well if you sub sugar-free maple syrup and chocolate chips.

    Air Fryer Baked Oats 

    Since I’ve made my other baked oats recipe I’ve figured out how to make this recipe in your air fryer. My Ninja Foodie Air fryer has a Bake setting on it! Set the temperature to 325 and time to 7. Check it and if it’s not done continue baking for a couple of minutes longer. No need to preheat your oven for a simple baked oats recipe. 

    What Ingredients do I need? 

    In this section, you can find substitutes or suggestions for certain ingredients. I also will try and list out what the ingredients' purpose is for. 

    Pumpkin Puree - Use organic if you can! The main ingredient is and always will be pumpkin. Those other brands are different types of squash that have been pureed. 

    Oats - If you have a blender pulse the oats until they form oat flour. Store the rest of the oat flour in an airtight container. This will make the oats look more like cake. 

    Maple Syrup - use pure syrup or sugar-free maple syrup to help lower the points

    Vanilla - use pure vanilla - I get this and the maple syrup at Costco 

    Pumpkin Pie Spice - I have a recipe for homemade pumpkin pie spice here. 

    Baking Powder - to help the oats rise 

    Salt 

    Chocolate Chips - use sugar free or regular chocolate chips

    Feel free to add in your favorite protein powder to the oat mix. - Optional 

    How to make Baked Pumpkin Oats

    Preheat the oven to 350 degrees. 

    Mix together all the ingredients in a bowl. Pour the batter into a greased muffin tin or 8 oz round ramekin. 

    Blender: For a smoother batter puree the oatmeal mixture in a blender until smooth. Pour the batter into a muffin tin or 8 oz round ramekin. Then top with chocolate chips (optional)

    Bake for 20 to 25 minutes. Best served warmed. 

    Air Fryer: Set the air fryer to bake and temperature to 325. Bake for 7 to 10 minutes.

    Ingredients

    • ¼ cup pumpkin puree
    • ¼ cup blended oats

    • ½ tsp vanilla

    • 1 tsp baking powder

    • 5 - 7 Sugar-free chocolate chips

    Instructions
