Description

Crustless Strawberry Pie - a low carb and WW friendly sugar-free pie that is super easy to make. Each slice of pie is 0 smart points, 37 calories, and 6 net carbs per slice.


Ingredients

Scale
  • 1 3oz package of strawberry jello
  • 2 tablespoons of cornstarch
  • 1/4 cup of sugar
  • 1/4 teaspoon of salt
  • 2 cups of water
  • 4 cups of fresh strawberries, hulled and sliced

Instructions

  1. In a medium saucepan, combine the cornstarch, sugar, and salt. Gradually whisk in the water until everything is well combined. Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly.
  2. Once the mixture comes to a boil, reduce the heat to low and continue stirring for 2-3 minutes until the mixture has thickened.
  3. Remove the saucepan from the heat and let it cool down for 5-10 minutes. Then, gently stir in the sliced strawberries and strawberry jello.
  4. Pour the strawberry filling into the cooled pie dish and smooth out the top with a spatula.
  5. Refrigerate the pie for at least 2 hours or until the filling has set.
  6. Once the pie is set, serve it chilled and enjoy!
