    Why You Will Like These Egg White Pancakes

    I tried the viral pancakes from Hailey Fernandes on Tiktok. In case you didnโ€™t know who she is sheโ€™s a fitness influencer on that app and her pancake recipe is going pretty viral. Itโ€™s almost like an eggwhite souffle when you watch it rise.

    The first couple of tries I made this pancake it completely flopped and it ended up looking like scrambled pancakes. It just takes a couple of times to get it right.

    I like how clean this easy and the ingredients are really to have on hand or in the pantry or fridge. It also has quite a bit of protein and these are very WW friendly pancakes.

    Ingredients Needed for Egg White Pancakes

    • ยฝ cup of egg whites (approximately4 large egg whites) - for best results use fresh egg whites
    • ยฝ banana mashed
    • 1 tsp of baking powder (In her video she just eyeballs this and you really can't tell how much she added. It looks like anywhere from a teaspoon to 1 tablespoon.
    • 1 teaspoon cinnamon
    • ยฝ teaspoon of vanilla extract
    • Pinch of salt
    • Cooking spray or butter for greasing the pan

    Optional Pancake Toppings

    • Fresh fruits (e.g., berries, banana slices)
    • Maple syrup or honey
    • Greek yogurt
    • Nut butter

    How to Make Egg White Pancakes

    Step 1 Prepare the Batter: In a blender add the egg white, mashed banana, baking powder, and vanilla extract until well combined. I used a Ninja Creami Bullet to blend the batter do not use a whisk!

    Step 2 Preheat and Grease the Pan: Place a non-stick skillet or griddle over medium heat and lightly coat it with cooking spray or butter. This is what the batter should look like after blended.

    Step 3 Cook the Pancakes: Pour about ยผ cup of batter onto the heated skillet for each pancake.

    Serve and Enjoy: Transfer the pancakes to a serving plate and keep warm. Repeat the process with the remaining batter. Cook until bubbles form on the surface and the edges look set, approximately 2-3 minutes.

    Pro Tip: Sometimes the pancakes will be hard to flip and they will look messy but I promise the end result is good.

    Carefully flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.

    Top with your choice of fresh fruits, a drizzle of maple syrup, or any of your favorite toppings.

    How Many Egg Whites is ยฝ Cup?

    If you are halfway through this recipe and realizing you don't have a measuring cupโ€”or youโ€™re staring at a carton of egg whites wondering how much to pourโ€”here is the quick answer:

    ยฝ cup of liquid egg whites is equivalent to 4 large eggs.

    However, not all egg whites are created equal. Depending on what you have in your kitchen, here is how to get the measurement perfect:

    Carton Egg Whites: If you are using a product like Egg Beaters 100% Egg Whites or Bob Evans Egg Whites, rely on the weight. ยฝ cup of liquid egg whites weighs approximately 120 grams.

    Tips for Perfect Pancakes

    You can drop this right under the instructions in your post:

    For best results:

    • Cook on medium low heat. High heat will burn the outside before the center sets. If the heat is too high the pancakes will turn black.
    • Use a flat top griddle or Blackstone to cook the pancakes faster. I tried a pan once and it was just easier on a flat top!
    • These egg white pancakes tend to come out soft and crepe-like because thereโ€™s no flour or fat to give them structure.
    • Make smaller pancakes so they flip easily.
    • Blend the batter for a smooth texture.
    • Let the batter rest before cooking for fluffier pancakes.

    Ingredients

    Instructions

    Add the egg whites, mashed banana, baking powder, cinnamon, vanilla extract, and a pinch of salt to a blender. Blend until the batter is completely smooth and slightly frothy. Let the batter rest for 3 to 5 minutes to activate the baking powder and thicken.

    Preheat and Grease the Pan

    Place a nonstick skillet or griddle over medium low heat and lightly coat it with cooking spray or a small amount of butter. Lower heat is important so the pancakes cook through without burning.

    Cook the Pancakes

    Pour about ยผ cup of batter onto the warm skillet for each pancake. Use the back of a spoon to gently spread the batter into a small circle if needed. Cook until bubbles form on the surface, the edges look set, and the bottoms are lightly golden, about 2 to 3 minutes.

     

    Flip carefully and cook for another 1 to 2 minutes, or until the pancakes are cooked through. These pancakes are delicate, so keeping them smaller makes them easier to turn.

    Whip it Up for Fluffiness: To achieve a light and airy texture, consider whipping the egg whites to soft peaks before incorporating them into the batter.

      Hi thanks for sharing! I noticed you listed 1/2 cup of egg whites but 8 egg whites. 1 large egg white is 30g so that would be 240g or 1 cup not 1/2 cup. Could you please clarify if it's 1/2 cup or 1 cup of egg whites? I'd love to make it! Thanks xx

      Baking soda or baking powder??? The list of ingredients says one and the directions say the other!
